The word “Rusks” comes from the word biscuit in French meaning “twice baked” or preserved bread. In the 1600’s French and Dutch soldiers were sent to war with an almost inedible ‘hard bread’ made from flour and water. The original rusk recipe used in Cape Town dates back to about 1760. At the time, ships rounded the Cape of Africa on their way to the east to buy pepper. Ladies who had settled in Cape Town, baked rusks to sell to the sailors and passengers on passing ships and to adventurers who braved the wild interior of South Africa. 

The rusks of old have come a long way. They are no longer hard and inedible, but are now a far better quality, and are made in loads of flavours such as buttermilk and condense milk, with many healthy options such as bran or wholewheat, muesli, sunflower seeds, raisins, oats, nuts etc.

​South Africans typically eat them as a healthy breakfast snack, by dunking them in their coffee to soften them up before taking a bite.
