Biltong is South Africa’s national snack, and its easy to see why. Who wouldn’t want a deliciously healthy snack that has 50% protein and 3 % fat?
In 1836 the local pioneers in South Africa embarked on what became known as “the great trek” – a migration by oxen wagon and horseback – to get away from the British. They crossed deserts, mountains, braved wild animals until they got to an area called the Transvaal where they discovered gold and decided to settle. To sustain themselves, they killed and ate wild animals. The would then eat as much of the fresh meat as possible and cured the rest using salt and spices. They called it Biltong. It was rich in protein, light to carry, kept well and could be reconstituted in stews.
Biltong is a delicacy that’s now catching on with a growing band of Aussie followers, and is making steady progress into the Aussie larder. African Vibe make biltong from Prime Australian beef and kangaroo, although it can be made with venison or ostrich. The meat is traditionally cut from the hind leg or shoulder, is marinated in herbs and spices (especially coriander) and hung in drying rooms to cure for 5 to 7 days. African Vibe uses an old family recipe to develop that unique taste.
